Do you want to delve into the world of culinary arts? This FdSc offers you the opportunity to not only gain a critical understanding, but also the hands-on and skills you’ll need for a career within the industry.
Looking at topics such as food science and nutrition, menu design and sensory evaluation, as well as modernist cookery and pastry techniques, you’ll be mentored by industry professionals with years of experience in the world of restaurants, contract catering, gastropubs and other food and beverage operations.

As an accredited HTQ course, this runs for two years with an industry-certified focus on employability and hands-on training. We aim to provide you with a practical education in Culinary Arts Management to help ensure you are prepared for employment. 
Delve into industry
On this course, we work with several hotel and hospitality partners for mentoring, live briefs, placements, internships and visits. These include, but are not limited to; Marriott, The Ivy Collection, Vacherin, Le Manoir aux Quat'Saisons, Melia Hotels, Red Carnation Hotels, Firmdale Hotels PLC, The Urban Pubs & Bars Company and The Fat Duck Group.
You will also benefit from the industry mentorship programme offered by our partner organisations. In each year you’ll be allocated an industry mentor from one of our great partners, here you’ll have the opportunity to learn directly from successful hotel and hospitality leaders.
Undertaking work experience is an integral part of the course. This unique approach to studying at BNU, is underlined by our core belief that practical, hands-on experience must always complement a theoretical, research-informed teaching strategy. That is why, as part of your core curriculum, in year two, you’ll put your skills and knowledge into practice through an integrated internship. 
Additionally, you will have the opportunity to engage in co-curricular, by taking part in community projects organised in collaboration with local hotels, as well as attending guest talks, industry visits and a wide range of networking events, conferences and seminars organised by our school and our industry partners.

The FdSc Culinary Arts Management programme is uniquely designed to enable you to develop your creative culinary skills, by tapping into contemporary trends and modernist, innovative, science-based culinary techniques. 
By completing this programme, you will expand your employment opportunities towards a variety of career paths, including head/executive chef or pastry chef, and opportunities to work in areas related to menu development, food product development and other gastronomy-related fields.
